I keep getting messages asking how I came up with this recipe and the answer is simple. My toddler eats like a single man in a big city. Pizza, donuts, fries... basically anything categorized as unhealthy, my toddler loves it. So, my mission is to recreate those unhealthy foods into something healthy and nutricious for him. Obviously my whole entire world revolves around my babe, so most of my recipes are inspired for him . However, these are so good anyone can eat them!
Ingredients- Makes 24 Pizza Rolls
You can substitute any veggie or meat you would like
6 Wonton Wrappers
1 Clove of Garlic
2 Whole mushrooms
1/2 Green Bell Pepper
8 Slices of Organic Turkey Pepperoni
1 cup of Marinara sauce
1/2 cup of mozzarella cheese
Salt, Peper and Oregano (to taste)
Create your mixture- Finely chop the zucchini, shallot, garlic, mushrooms, bell pepper, and turkey pepperoni. Add salt and pepper to taste.
Place a skillet on medium heat, once heated add olive oil.
Add veggies and sauté until soft.
Once veggies are soft, add 1 cup of marinara sauce and reduce down for 1-2 minutes.
Set mixture aside and add mozzarella cheese. Mix together
On a sheet pan, place parchment paper down and preheat oven to 375 degrees.
Get 6 sheets of wonton wrappers, and cut down the middle vertically and horizontally. (You should be left with 4 even squares)
Add 1 teaspoon of the prepped mixture to the inside of the wonton, The using a small bowl with a little bit of water, dip your pointer finger in and spread the water around all four edges of the wrapper.
Fold the wrapper in half, and firmly press your fingers around all edges to make sure its sealed.
Continue this step for all the rolls.
Once done, place the rolls on the sheet pan about 1/2"-1" apart. Coat the top with olive oil to give it a nice browning and sprinkle salt and a little oregano for taste.
Baked at 375 for 15 minutes or until golden brown.
